Ok - this recepy does not seem very savoury in
the first place but one can have the
potatopuffers with several toppings which can be
sweet or savoury...
At first peel the potatos and grate them. Put
the potato mass into a tea towel and press all
the juice out (we always just took the bowl and
got rid of the water what was in there...) Peel
the onion and grate them as well and mix them
into the potato mass. Add the flour
as well as the eggs and a bit of salt. Stirr
well. Heat some fat in a pan and give portions of
one table spoon per puffer into the pan and
spread out thin. Do not make more than three at a
time. As soon as a brown edge is to be seen turn
the puffer over and bake from the other side
until done.
As a topping the applestew is a very good idea
or alternatively one can grate a carrot and cut
spring onions into little pieces. Add some
fresh cream cheese and spice with salt and
pepper!
Fry onions in a large pot
until golden. Add minced meat and let it fry a bit
as well. When colour has changed evenly add
mushrooms as well as the cut leek. Let it all sit
until the leek is medium done. Add water so all
content of the pot is covered and spice with the
vegetable stock. Let it boil until the leek is soft and add the cream
cheeses. When the cheese is melted the soup is
ready to serve :-)
Stir the butter to cream, add two eggs one after the other, 6 egg yolks, suggar, and flour.
Beat the six egg white to a froth and work it
under the other mass. If the resulting mass is
too thick use milk or cream to thin it out.
Give a medium scoop into a hot pan and spread
out thin. As soon as the pastry develops blisters
the panckake can be turned around to bake from
the other side.
The topping can be suggar, cinamon, ice cream or
applestew, bananas and honey...etc. or the same carrot topping as with the
potatopuffers.
Soak the lentils for about half a day so you do not have to
cook them too long. If you forget to soak them it will take twice
as long to boil them until done.
Give the soaked lentils into a pot with enough
water and bring to boil. Boil for around 20min.
Cut carrots and potatos into cubes.
Add those cubes to the lentils when they are almost done and boil
everything until soft. While the soup boils you can give the bacon into a pan and fry it before adding it to the lentils. When everything is ready spice the soup with some lemon juice, salt and pepper as well as some sugar.
IMPORTANT: Do not spice
lentils before they are soft enough to eat.
Otherwise they stay hard!!!
